I’ve finally discovered buckwheat and I couldn’t be happier about it. I, like a lot of other people, had originally assumed it to be a grain, but after some digging I found that is it actually a fruit seed. You can buy buckwheat flour as well as the groats that I used in this recipe quite readily – I got mine in my local supermarket.
When I was living at home, my Mum bought a bag and we said we would experiment with the groats but never ended up getting around to it. Well, let me tell you right now that you can expect plenty of buckwheat recipes from me over the next few weeks! I’ve already got three up my sleeve to share so definitely go and invest in a big bag of them!
Buckwheat has been listed as one of the healthiest foods in the world – there are so many benefits that I would be here all day going through them. You can read up on them HERE, this is where I realized how brilliant this food is to incorporate into my diet. It’s absolutely a staple that is here to stay for a while. I can also confirm that this granola disappeared in less than one day. It is literally SO GOOD! I absolutely adore granola – I crave it every day without fail. Most shop bought granola’s are usually full to the brim with sugar, so I was happy out with my low sugar and vegan friendly version!
