Clean *Rice Crispy* Squares

Would you believe that I went to the shop yesterday and got a box of Rice Crispies & chewing gum for $15? I told myself I would need to get great use out of the Rice Crispies because it actually pained me to hand over that amount of money, and I wasn’t even sure if I wanted them! I don’t know why it keeps shocking me about how expensive things are here, I know that I keep going on about it, but it’s crazy!

I don’t think I know anyone who didn’t love rice crispy buns growing up. So simple and so satisfying! I thought, why not make a clean version to have for over the holidays?

There’s going to be a lot of eating done over the next few weeks between Thanksgiving, my birthday & Christmas. We’ve booked a really nice restaurant for Thanksgiving dinner so I am so excited. I had initially intended on cooking myself but if you saw the size of my kitchen you would understand why I decided against it. Not to mention that we still have no furniture except a bed and a tiny little table! I mentioned in my post yesterday that we were still without any appliances either, no wonder we keep eating out!

So anyway, this recipe literally took me five minutes to whip up, and then I chilled the mixture for about 2 hours in the freezer. Also, I hope at least one person noticed that I’ve finally shared a snack that isn’t shaped like a ball? I’m quite happy about that to be honest!


Also, I just have to mention how absolutely delighted I am to be featured alongside some of the foodies who I admire the most in Ireland in U Magazine’s latest edition. I set up Cinnamon Soul as a little personal project for my year away from home, so I am thrilled to see it do so well. It means so much to me, I can’t even begin to try and explain! Hoping and working for a lot more great things for my little blog! 🙂
