Sweet Potato & Coconut Soup

Ingredients

  • 500-600g sweet potatoes

  • 2 carrots (200g)

  • 4 garlic cloves

  • 400ml / 1 can coconut milk

  • 500-600ml veg stock

  • 3 onions

  • 1 pepper

  • Seasoning

  • Olive oil

  • Sprig of rosemary

Instructions

  1. To a large pot add some olive oil, then the onions & soften for about 5 mins.

  2. Add the sweet potato, carrot, pepper & garlic, followed by the salt & pepper & and a sprig of rosemary. Then soften for a further 10 mins with the lid on to let them sweat.

  3. Next add the veggie stock & leave to simmer on a low - medium heat for 20-30 mins until everything is softened nicely.

  4. Remove the rosemary, then add the coconut milk. Bring to a boil & then drop to a low heat & simmer for about 10 mins.

  5. Remove off the heat and blend.
