Spicy Sausage Pasta
Ingredients
Serves 1 (a large portion or two smaller portions)
2 sausages - skin off
1 small onion
3 cloves of garlic
Handful of cherry tomatoes
Tbsp of cream cheese
Tbsp of tomato puree
1 tsp Italian herbs
1/2 tsp chilli flakes
100g pasta
Olive oil
Parmesan
Instructions
Add your pasta to salted boiling water & cook per packet instructions.
Fry off the onion on a medium heat in a little olive oil.
Once softened, add in the garlic & tomatoes.
After 2-3 mins, add in the sausages minus the skin and crush into the veg.
Fry until the sausage is cooked through and crispy in places, then sprinkle over the chilli flakes & herbs.
Next add the tomato puree & fry for about 2 mins, then add in the cream cheese followed by a ladleful of pasta water.
Once cooked, drain the pasta water and add the pasta to the pan.
Garnish with a generous amount of Parmesan & enjoy!
