Spicy Sausage Pasta

Ingredients

Serves 1 (a large portion or two smaller portions)

  • 2 sausages - skin off

  • 1 small onion

  • 3 cloves of garlic

  • Handful of cherry tomatoes

  • Tbsp of cream cheese

  • Tbsp of tomato puree

  • 1 tsp Italian herbs

  • 1/2 tsp chilli flakes

  • 100g pasta

  • Olive oil

  • Parmesan

Instructions

  1. Add your pasta to salted boiling water & cook per packet instructions.

  2. Fry off the onion on a medium heat in a little olive oil.

  3. Once softened, add in the garlic & tomatoes.

  4. After 2-3 mins, add in the sausages minus the skin and crush into the veg.

  5. Fry until the sausage is cooked through and crispy in places, then sprinkle over the chilli flakes & herbs.

  6. Next add the tomato puree & fry for about 2 mins, then add in the cream cheese followed by a ladleful of pasta water.

  7. Once cooked, drain the pasta water and add the pasta to the pan.

  8. Garnish with a generous amount of Parmesan & enjoy!
