Leek & Potato Gratin
Ingredients
1kg Maris piper potatoes
2 leeks
4-5 cloves of garlic
300g cream
100g mature cheddar
Salt & pepper
1/2 tsp rosemary
1/2 tsp oregano
Instructions
Preheat your oven to 180C fan.
Peel your potatoes, then using a mandolin, slice them into thin slices.
Dice your leeks & fry them on a medium heat in some butter & olive oil.
After about 5 minutes, add in the crushed garlic & seasonings.
After a few minutes, add the cream and once it comes to a low simmer, add in the cheese and cook until melted.
Place your potatoes in your oven dish & then pour the creamy leek mixture over.
Grate some more cheese on top, and then cover with tinfoil before popping into the oven for 45 mins.
After that, remove the foil and then bake for a further 5-10 minutes until the top is golden brown.
