Chicken Satay

Weekend fakeaway! You need to try this delicious homemade chicken satay… YOU NEED: ❌2 chicken breasts ❌1 onion chopped finely ❌1 thumb of grated ginger ❌1 large clove of garlic ❌2 tbsp of soy sauce ❌5 tsp of peanut butter ❌1 tsp of honey ❌Zest of 1/2 lime ❌Juice of 1 lime ❌1 tbsp of mild curry powder ❌1 tin of coconut milk ❌Pinch of chilli flakes METHOD: ❌Brown the chicken in a hot pan and set aside once cooked. ❌Fry off the onions in the remaining oil on a medium heat, and then add the ginger and garlic. ❌Add the curry powder, and then the rest of the ingredients and stir well. ❌Once the sauce is bubbling, add the chicken and allow it to simmer for about 10 mins on a medium/low heat. ❌Serve and enjoy! #fakeaway #chickensatay

RASPBERRY PAVLOVA ROULADE 🍓A slightly different recipe to my course, but just as delicious! YOU NEED: ❌4 egg whites (don’t let even a tiny amount of yolk into them) ❌220g caster sugar ❌30g corn flour ❌Icing sugar for rolling & dusting (see video) ❌Whipped cream for filling (it’s hard to judge but we used about 250ml) ❌Raspberries for filling & decorating – or whatever fruit you like! METHOD: *We used a KitchenAid but you can you hand beaters* ❌Whip the egg whites until stiff ❌Add in half the sugar and whip again until shiny ❌Add in the rest of the sugar & cornflour and whip until stiff, a good test to see if it is stiff enough is to tip the bowl over and it should not budge! ❌Flatten your mixture onto your lined baking tray ❌Pop into the preheated oven at 180 for 15/20 mins until you get a light golden colour ❌Turn the meringue over onto baking parchment that has been dusted with icing sugar and wait for it to cool ❌Cut a little ridge into one side of the meringue to help with rolling ❌Spread your whipped cream & raspberries evenly ❌Roll and enjoy!

Crunchy Chicken Cashew Nut Stir Fry

CRUNCHY CHICKEN CASHEW NUT STIR FRY 🕺🏻 I am delighted to be working with Green Isle to show you just how simple it is to get an added punch of goodness into your meals. Their cauliflower rice couldn’t be easier to whip up, and it’s so tasty, especially with this dish. You need to give it a go! YOU NEED: ❌1 pack of Green Isle Cauliflower Rice ❌1 chicken breast ❌1 chopped onion ❌1 chopped garlic clove ❌1 thumb of chopped ginger ❌1/2 red & yellow pepper ❌2 chopped spring onions ❌Handful of cashew nuts ❌2 tbsp of soy sauce ❌1 tbsp of fish sauce ❌2 tsp of honey ❌Sesame oil for frying METHOD: ❌In a small bowl, mix your soy sauce, fish sauce & honey, then set aside ❌Add some sesame oil to a hot wok & fry your cashew nuts until golden, then set aside ❌Add your onion, garlic & ginger to the wok and fry for 3 mins ❌Then add your chicken and fry until it is cooked through ❌Add in the peppers & a pinch of chilli flakes, then your sauce from earlier ❌Fry for an additional 3 mins ❌Add the chopped spring onion for an added crunch, along with the cashew nuts ❌Set aside ❌Add your Green Isle Cauliflower rice a hot pan with some sesame oil ❌Fry for 3 minutes and serve with your stir fry (you can pop the cauliflower rice in the microwave for 3 mins either!) ❌Enjoy! #GetToTheGoodness #SP #healthyeating #greenisle

Healthy Chocolate Chip Cookies

🍪🍪🍪 A healthy take on chocolate chip cookies 🍪🍪🍪 YOU NEED: ❌100g oats ❌90g whole wheat flour ❌1 and 1/2 teaspoons baking powder ❌scant 1/2 teaspoon salt ❌90g of butter, melted and cooled ❌1 teaspoon vanilla ❌1 large egg ❌150g cup honey ❌ 50g of chocolate chips ❌50g of chopped mixed nuts METHOD: ❌Preheat oven to 180 & line a large baking sheet with parchment paper. ❌In one bowl, mix all of the dry ingredients. ❌In another bowl, add in melted (but cooled) butter, the vanilla, then the egg & the honey. ❌Add the dry ingredients to the wet, and mix. ❌Add your nuts and chocolate chips and stir. ❌Refrigerate the mixture for about 30 minutes, or freeze for about 15 minutes. ❌Use your hands to shape the dough into roughly 15 cookies (if you need to use two trays, that’s fine) ❌Bake for about 12-13 minutes, or until they have just started to brown on the edges. ❌Let them cool on the tray briefly before transferring them to a cooling rack. ❌Serve & enjoy! #healthycookies #recipevideo #foodvideo
