*Gluten Free* Ginger Bread Cookies

I cannot believe that Christmas Day is this Friday. I’m so gutted that I’m not at home for all of the festivities. I could barely watch all of the Snapchat stories from last night. There really is no place like home at this time of year.

I was racking my brain for some Christmas themed recipes during the week. Obviously gingerbread men was one of the first to spring to mind, but I didn’t have the mould for it to make the right shape. I decided cookies would have to do, because I have a huge bag of ground ginger that needs to be used up!

Gluten Free Ginger Bread Cookies

P1000431I genuinely could not have been happier with how these turned out. This batch lasted about 10 minutes after I made them – best sign ever! So I can officially and whole-heartedly guarantee that these are a winner!

Ginger Bread Cookies


  • 1 cup of coconut flour
  • 3 1/2 tbsp of coconut sugar
  • 4 tbsp of honey
  • 4 1/2 tbsp of almond butter
  • 5 1/2 tbsp of coconut oil
  • 5 teaspoons of ground ginger


  1. Preheat the oven to 180 Celsius or 350 Fahrenheit.
  2. Melt the coconut oil, honey and coconut sugar over a low heat (do not boil!) until combined. You will notice a separation between the oil and the other ingredients but that's fine!
  3. Add in the almond butter and mix it all up.
  4. Add in the coconut flour and ginger and mix until smooth.
  5. Try and refrain from eating the mixture as it is - it's amazing!
  6. Using your hands, roll into balls and place on a greaseproof paper lined baking tray.
  7. Flatten the balls down into cookie shapes.
  8. Bake for 15 mins.
  9. Allow to cool, or enjoy them warm!

These are chewy and tasty and everything you would want from a cookie! To be perfectly honest, I was so surprised at how well these turned out!

A few weeks ago a lady got in touch with a question about using my Coconut & Lime Truffles as a stocking filler, and I was wondering how I hadn’t thought of that idea! I think that these Ginger Bread Cookies would also be a perfect little option to wrap up and surprise someone with on Christmas morning, especially if you’re a bit last minute with gifts!
