Salted Coffee, Pecan & Lime Rocky Road

SALTED COFFEE, PECAN & LIME ROCKY ROAD! I got this recipe from the Guardian, and I don’t ever want my house to be without a portion of it from now on. It is the tastiest twist on a classic rocky road & you need to try it! YOU NEED: ❌125g milk chocolate ❌125g dark chocolate ❌125g butter ❌2 tbsp maple syrup ❌1 tbsp instant coffee ❌Zest of two limes ❌100g mini marshmallows FOR THE CRUMBLE: ❌100g rich tea biscuits ❌140g shelled pecan & walnuts, roughly chopped ❌1/2 tsp flaked sea salt ❌50g butter, melted ❌2 tbsp maple syrup METHOD: ❌Heat the oven to 170C fan oven and line the base and sides of a 20cm square tin with baking paper. Put the biscuits in a bowl and break them into 1cm-2cm pieces with your hands. Tip all the other crumble ingredients and mix to combine. Transfer to an oven tray lined with greaseproof paper, spread evenly and bake for about 20 minutes, stirring once, then leave to cool completely. ❌Meanwhile, put the chocolates, butter, syrup and coffee in a heatproof bowl and set it over a medium saucepan of barely simmering water on a medium heat (make sure the water doesn’t come into contact with the base). Leave to melt, stirring occasionally, then leave to cool for 15 minutes. ❌Put the lime zest, marshmallows, crumble and melted chocolate mix in a large bowl and stir to combine. Transfer to the lined tin, and press down to even it out. Refrigerate to set: at least four hours or overnight. Energy Balls

💥 ENERGY BALLS 💥 there are so many different variations that you can make, and I’ll continue to film different versions, but for now I’m loving these! My mum makes so many different versions each week and these were ones that I knew people would like, slightly different to the usual date base that is done, but even more delicious and not as sweet. YOU NEED: ❌200g figs ❌2 tbsp of desiccated coconut ❌1 tbsp of ground almonds ❌1 tsp coconut oil ❌Pinch of salt ❌6/7 squares of dark chocolate, melted METHOD: ❌Add all of the ingredients, except the dark chocolate into a magi-mix / nutribullet and blend until combined ❌Roll into bite size balls ❌Melt the chocolate and coat the balls in the chocolate with two spoons – it gets too messy if you use your hands ❌Store in the fridge, enjoy! #energyballs #Recipevideo #foodvideo #homemade

Bread & Butter Pudding

BREAD & BUTTER PUDDING 🍞💛 YOU NEED: ❌25g butter, plus extra for greasing ❌8 thin slices bread ❌50g raisins/sultanas ❌2 tsp cinnamon powder ❌350ml whole milk ❌50ml double cream ❌2 free-range eggs ❌25g sugar ❌Nutmeg, grated, to taste METHOD: ❌Grease a pie dish with butter. ❌Cut the crusts off the bread. Spread each slice with on one side with butter, then cut into triangles. ❌Arrange a layer of bread, buttered-side up, in the bottom of the dish, then add a layer of sultanas. Sprinkle with a little cinnamon, then repeat the layers of bread and raisins, sprinkling with cinnamon, until you have used up all of the bread. Finish with a layer of bread, then set aside. ❌Beat together the eggs, cream and milk in a bowl, add the sugar and pour it over the pudding. Sprinkle with sugar, and then leave to stand for about one hour if time allows. ❌Preheat the oven to 180C. ❌Place the dish into the oven and bake for 30-40 minutes, or until the custard has set and the top is golden-brown. ❌Serve warm with a scoop of vanilla ice-cream & enjoy! #breadandbutterpudding #pudding #Recipevideo #foodvideo #homemade
