THAI BEEF SALAD 🥗 @supervalu_irl YOU NEED: ❌1 SuperValu striploin steak, sliced ❌Juice of half a lime ❌1 tbsp of sesame oil ❌1 tbsp of fish oil ❌1 tsp of soy sauce ❌2 tsp of sugar ❌1 clove of garlic, minced ❌As much chopped fresh chilli as you can handle ❌1 thumb of grated ginger ❌Bowl of mixed leaves ❌Fistful of coriander ❌100g cherry tomatoes ❌150g cucumber ❌1/2 small red onion, diced ❌30g peanuts ❌3 fresh mint leaves, roughly chopped METHOD: ❌Take the striploin steak out of the fridge and bring it to room temperature. Season with pepper. ❌Fry it in some olive oil & toss for about 3-4 minutes, depending on how well done you like it. ❌Take off the heat & allow it to rest. ❌Add you lime juice, sesame oil, soy sauce, sugar, garlic, chilli & ginger to a jar and shake well. ❌Add the mixed leaves, coriander, tomatoes, cucumber & red onion to a large salad bowl. ❌Serve the beef on top. ❌Pour your dressing over it. ❌Sprinkle the chopped peanuts over the salad, then add your mint. ❌Serve & enjoy! So here it is…probably one of the tastiest dishes that I have ever made, and I wouldn’t say that lightly! I’m thrilled to team up with @supervalu_irl to bring you this recipe video. 🍓IT’S STRAWBERRY SEASON 🍓 I am delighted to team up with @bordbia to bring you a seasonal recipe for the summer. This recipe is so gorgeous & couldn’t be easier…(serves 2) YOU NEED: ❌250g Strawberries ❌200ml Fresh Cream ❌4 Meringue Nests ❌Fresh Mint METHOD: ❌Put the cream into a bowl and whisk until whipped ❌Divide your strawberries – pop 75g into a jug and blend until you have a puree ❌Chop the remaining strawberries and set aside ❌ Crush the meringue nests in a bowl, then add in the whipped cream and the strawberries. Stir lightly, be careful not to crush the strawberries ❌Assemble the strawberry mixture and the juice in the glass/bowl of your choice ❌Top with an extra half meringue nest & some fresh mint ❌Serve & enjoy! #SP #CelebrateStrawberrySeason #NaturesTreat #RecipeVideo

Overnight Oats

OVERNIGHT OATS 💕 I love these for breakfast when I’m organised enough to plan ahead…😅 YOU NEED: ❌40g Flahavan’s Oats ❌Handful of blueberries ❌Handful of blackberries ❌2 tsp chia seeds ❌2 tsp sunflower seeds ❌2 tsp pumpkin seeds ❌Milk to cover METHOD: ❌Add about a third of your oats and fruit into a jam jar and pour in enough milk to cover. Stir well. ❌Add in all of your seeds, and then the rest of the ingredients. Cover again with milk and stir. This way, you won’t have any dry lumps of oats at the bottom of your jar, and you won’t have too much liquid either. ❌Pop into the fridge overnight and enjoy chilled in the morning. ❌Feel free to add honey or another sweetener the next day. I don’t, as the these berries are sweet enough and compliment each other nicely. ❌Enjoy! #recipevideo #foodvideo #homemade #overnightoats #healthybreakfast #breakfast
