Double Chocolate Brownies

DOUBLE CHOCOLATE CHEWY BROWNIES 🤪 it’s a day for the ducks so there’s no excuse to not bake your Saturday away… 🥰 YOU NEED: ❌275 of plain chocolate (70% cocoa) ❌275g butter ❌270g Dairymilk Chocolate ❌175g plain flour ❌1 tsp baking powder ❌4 large eggs, beaten ❌1 tsp vanilla essence ❌ 325g caster sugar ❌ METHOD: ❌Preheat oven to 170 & line an 8 x 12 roasting pan with parchment paper. ❌In one bowl, melt the plan chocolate and butter over simmering water. ❌In another bowl, sieve the flour and baking powder. ❌When the chocolate and butter have melted, add in the sugar and beaten eggs. Then the vanilla essence. ❌Then fold in the flour and baking powder. ❌Pour the mixture into your lined roasting pan and place in the oven for 25-35 mins. Keep an eye on them though, depending on your oven. You want it to be firm on top but soft underneath. ❌Allow to cool and then cut into squares. ❌Enjoy! #foodvideo #brownies

Pancakes Two Ways

For the week that’s in it…PANCAKES TWO WAYS! 🥞🥞🥞 This recipe has been a staple in our house year over year. I really hope you like it! You can enjoy them with lemon & sugar for a classic dish, or try my take on crepe suzette, sooooo tasty!!! YOU NEED (FOR PANCAKES): ❌110g flour ❌Pinch of salt ❌2 eggs ❌75ml of water ❌200ml of milk ❌2 tbsp of melted butter YOU NEED (FOR SAUCE): ❌50g butter ❌50g sugar ❌100ml cream ❌Rind & juice of 1 orange ❌Rind & juice of 1 lemon METHOD FOR PANCAKES: ❌Sieve the flour & salt into a mixing bowl. ❌Create a well and crack 2 eggs in. ❌Whisk the eggs while SLOWLY incorporating bits of flour in from around the well. ❌Add the milk and water (combined) bit by bit. Ignore any lumps, they’ll disappear eventually. ❌Once all of the liquid is added, heat your pan and melt a small amount of butter. ❌Add the melted butter to the mixture right before you start to fry, stir well. ❌Spoon about 3/4 of a ladle onto your pan each time, and fry until both sides are golden brown. METHOD FOR SAUCE: ❌Melt the butter on the pan. ❌Add all of the ingredients except the cream. ❌Bring the mixture to the boil to ensure the sugar is melted. ❌Then lower the heat and add the cream. ❌Add a generous amount of sauce to your pancakes. ❌Enjoy! #pancaketuesday #crepe #pancakerecipe #recipevideo #foodvideo

Hake Bake

The most delicious dinner that really is so simple. Hake is a meaty white fish and this dish has me loving it so much right now. I got this recipe from @maireflynn_tannery_restaurant cook book by Paul Flynn. 🙌🏻❤️ YOU NEED: ❌2 150g fillets of Hake ❌1 tbsp creme fraiche ❌20g of melted butter with crushed garlic mixed in ❌1 chopped onion ❌1 minced clove of garlic ❌1 chopped red pepper ❌1/2 tsp of curry paprika ❌1/2 tsp of curry cumin ❌1/2 tsp of curry cayenne pepper ❌1/2 tsp of chilli flakes ❌1 tin of tomatoes ❌1 tin of white cannellini beans (drained & rinsed) ❌Baby potatoes ❌Olive oil for frying ❌Salt & pepper for seasoning METHOD: ❌Brush the hake with half of your garlic butter & then brush with the creme fraiche. Season with salt & pepper ❌Bake in your preheated oven for about 20 mins at 180, keep an eye on it until the hake is really white when cut, as opposed to translucent ❌Meanwhile, fry your onions, garlic and red pepper in olive oil until soft ❌Add your spices and fry on a low heat for 2 minutes ❌Then add your tin of tomatoes & the beans ❌Simmer for 15 minutes ❌Spoon the tomato stew onto your plate ❌Add crushed baby potatoes on top and then add the rest of your garlic butter ❌Place the hake on top, and scatter the plates with black olives & some aioli ❌Serve & enjoy! #foodvideo #recipevideo #hake

French Toast

Red Thai Sweet Potato Curry

!!! RED THAI SWEET POTATO CURRY !!! I am so thrilled with how delicious & nutritious this entire meal turned out. I am thrilled to be collaborating with Green Isle again to promote their Super Greens Rice. It’s a low carb alternative to normal rice and packs such a healthy punch. I think it’s perfect for a veggie curry like this that is already packed with carbs. If you try this let me know, you won’t regret it! ❌1 packet of Green Isle Super Greens Rice ❌1.5 tbsp of oil ❌2 tbsp of red curry paste ❌1 can of coconut milk ❌2 sliced onions ❌1 large cubed sweet potato (about 600g) ❌1/2 sliced yellow pepper ❌40g of crushed peanuts ❌2 tbsp of fish sauce ❌90g of fresh spinach ❌30g of coriander METHOD: ❌Heat the oil over medium high heat. Add the onions and fry until soft. Add the garlic & pepper and allow them to soften. Add the sweet potatoes and stir to coat with oil. Add the curry paste and stir until well-combined. ❌Add the coconut milk and let it simmer over low heat for 15-20 minutes until thickened & the sweet potato feels cooked. Stir in the spinach until wilted. ❌Add half of the peanut & coriander mixture (save the rest for topping). Add your fish sauce to the curry for a savoury kick. ❌Pop your Green Isle Super Greens Rice into the microwave for 3 minutes & it’s ready to eat! ❌Garnish with the remaining peanuts & coriander & enjoy! #AD #HealthyEating #GetToTheGoodness #GreenIsle #VeggieCurry #RecipeVideo #FoodVideo
