*Peanut* Butter Cookies

As it starts to cool down more in the evenings it’s nice to have something that really compliments a cup of tea in the evenings. These cookies are really simple, and are a great alternative to shop bought biscuits which don’t have your waistlines best interests at heart!

Peanut Butter Cookies

I find that I’m never really bothered to bake, I much prefer throwing a pile of ingredients together that stick and then can just be stored for whenever I’m peckish (check out my Chocolate Protein Balls). I can be quite lazy a lot of the time, but at the moment I’m still trying to make the best of a bad situation by being down a functioning hand, so I have more time to play around with baking. I’m actually really enjoying the trial and error of recipe testing, and at least now that I’m doing it, you don’t have to!

Peanut Butter Cookies Recipe:

3 tbsp of peanut butter

1 tbsp of honey

4 tbsp oats

1 egg

½ tsp of vanilla extract

1 tbsp of coconut oil

Method:

  1. Blend up the oats in a blender, until you get a flour consistency
  2. Melt the coconut oil in the microwave for a few seconds
  3. Mix all of the ingredients in a bowl
  4. Roll the mixture into even balls on a baking tray lined with parchment
  5. Flatten them down in to biscuit shapes
  6. Bake at 180 degrees for 10 mins
  7. Leave to cool before tucking in
