I’m still very much up in the air in the midst of trying to get my kitchen together.
Last week I stocked up on a few of my staple kitchen ingredients, which are so handy for snacks and breakfast time. I’m still without any appliances though, not even a kettle! When an apartment comes unfurnished here, they really mean it! Once I get a microwave (hurry up Black Friday!!!), I’ll switch back to my warm bowl of porridge in the morning, but for right now, I’m starting each day with some different variations of overnight oats. I think people are generally quite put off by porridge but I would really urge anyone who isn’t a fan of the texture to try overnight oats. They’re much smoother, in my opinion, and you can top them off however many ways you please.
I’ve opted for some Peanut Butter Overnight Oats this time, they’re delicious and so handy to whip up the night before. I’ve started bringing my jar of oats to work because I’m never too hungry in the morning but once 11 o’clock rolls around I am starved! These, along with some fruit and a lot of coffee always do the trick to get me to lunch time! If you follow me on Instagram, you may have seen how excited I was to start my new job last week. I never could have imagined getting the opportunity to work with such an incredible brand, but this city will always surprise you when you least expect it.
- 1 cup of oats
- 1/2 cup of almond milk
- 2 tablespoons of crunchy peanut butter
- 1 tablespoon of agave nectar (to sweeten)
- Throw all of the ingredients into the jar
- Mix them well
- Pop into the fridge and consume the following morning
