Protein Pancakes

Ingredients

(Makes 6)

  • 1 egg

  • 3 tbsp Greek yogurt (around 140ml)

  • 3 tbsp Plain flour (around 70g)

  • 2 tsp Maple syrup (around 25g)

  • 1 tsp Baking powder

  • Around 30ml coconut milk

  • Coconut oil to fry

    *lots of “around” in terms of measurements - you don’t have to be exact with this batter 🩷

Instructions

  1. Mix all of the ingredients together and fry each side on a low heat for about 5 mins or so, until cooked through.
    Serve with your topping of choice.
