Cheesy Chicken Tacos

Ingredients

  • 1 chicken breast

  • 1/2 red onion

  • 1/2 pepper

  • 1 garlic clove

  • 1 tsp paprika

  • 1/2 tsp chilli powder

  • 1/2 tsp mixed herbs

  • 1/2 tsp salt

  • 1/4 tsp cumin

  • 1/3 tin of chopped tomatoes

  • 2-3 tbsp of Boiling water to loosen the mixture

  • Olive oil

  • Cheddar cheese

  • Jalapeños

  • Sour cream

  • Fresh lime

Instructions

  1. Chop the veggies and add it to a large bowl with the spices & chicken breast. Add a drizzle of olive oil & combine well.

  2. To a hot pan, sear the chicken on both sides, for about 3-4 minutes. Then, add the veggies and fry them for a further 5 minutes.

  3. Next, add in the chopped tomatoes & water, and allow everything to simmer on a low-medium heat until the chicken is cooked through.

  4. Remove the chicken, and shred with 2 forks. Then replace back into the pan.

  5. After combining everything, add the chicken mixture to a side bowl.

  6. Take your wraps, place each onto the pan on either side soaking up the remaining sauce.

  7. Then layer them up with on the pan cheese, jalapeños & the chicken mixture. Fold the wrap over in two and fry lightly on each side.

  8. Serve with sour cream & fresh lime & enjoy!
