Creamy Butter Beans On Toast

Ingredients

  • 1 onion

  • 2 cloves of garlic

  • 100g cherry tomatoes

  • 1 tbsp tomato puree

  • 1 tin of butter beans

  • 1 tbsp cream

  • Salt & pepper

  • Basil & Parmesan to garnish

Instructions

Soften the onions in a little olive oil for 5 mins, then add in the crushed garlic and chopped tomatoes.
Next, add in the tomato puree and fry off for a minute, then add in the tin of butter beans. (I drained off a little liquid from the tin but you can add it all in either)
Once simmering for 5 mins, add in the cream and then simmer for another 5-10 mins until the beans are nicely cooked through and the sauce has thickened.
Break up some basil leaves and mix in with some Parmesan.
Season as you like.


Serve with toasted crusty bread & enjoy!
