Slow Cooker Short Rib

Ingredients

  • Serves 2 (with leftovers!)

  • 1kg short rib

  • 4 garlic cloves

  • 3 Carrots

  • 2 onions

  • 1 leek

  • 400ml beef stock

  • 400ml of red wine

  • Bunch of rosemary & thyme

  • 1 tbsp tomato puree

  • 1 tbsp Worcester sauce

  • 4 bay leaves

  • Salt & pepper

Instructions

Pat the short rib dry, then season well on each side.
Sear each side in a very hot oiled pan. Then remove from the pan.
Add the sliced onions & carrots to the pan & allow to soften for 3-5 mins. Then add the leek and garlic in on top. Soften again for a further 5 minutes, then add in the tomato puree and Worcester sauce, and allow to cook for a minute or two.
Then, transfer the contents of the pan to your preheated slow cooker. Place the short ribs on top, followed by the beef stock, red wine, bay leaves & bunch of herbs.
Slow cook on high for 6-8 hours until the beef is falling off the bone.

Serve over a bed of mash with the sauce on top & alongside a delicious glass of red ❣️
