Mac n Cheese

Ingredients

350g macaroni
450ml milk
2 tbsp butter
2 tbsp plain flour
1 clove of garlic, minced
1 tsp mustard powder
1 tsp paprika
1 tsp onion salt
100g mozzarella
100g red cheddar
(Plus extra of each for the topping!)

Instructions

Preheat the oven to 180C fan.
Boil the pasta for 2 mins less than stated on the pack, then drain.
Meanwhile, melt the butter in a large pan. Add the garlic and English mustard powder, onion salt & paprika and cook for 1 min, then stir in the plain flour.
Cook for 1 min more, then gradually whisk in the milk until you have a lump-free sauce.
Simmer for 5 mins, whisking all the time until thickened. Take off the heat, then stir in the cheddar & mozzarella.
Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish, or four individual dishes.
Scatter some extra cheese on top and pop into the oven.
Bake for 15-20 mins or until golden brown on top.
