Chicken & Veg Stew
Ingredients
2 carrots, chopped
2 onions, sliced finely
2 small / 1/2 large leek, sliced
1/2 a small cabbage, sliced
3 cloves of minced garlic
1/2 tsp of chilli flakes
1 tsp of oregano
1/2 tsp each of S&P (at least this much IMO but add to taste)
1 stock cube
1 litre of boiling water
2 chicken breasts
3 sprigs of fresh rosemary
Instructions
1.Add the carrots and onions to a pot with some heated olive oil & melted butter. Stir & simmer until softened, about 5-7mins.
2.Add the leek & cabbage in on top. Then add the garlic & mix well. Pop the lid back on & soften for another 10 mins or so.
3. Add in the spices & seasoning, followed by the stock cube & water, then mix well. Add in two scored raw chicken breasts + the fresh rosemary sprigs.
4.Make sure the chicken is submerged, and then leave to cook for about 30 mins or until the chicken is cooked through.
5.Remove the rosemary & chicken from the mixture, shred the chicken & then pop it back in.
6. Serve over mashed potato or enjoy as it is!
