Chicken & Veggie Bowls

Ingredients (serves 2)

  • 1 red onion

  • Juice of 1 lime

  • 1 large sweet potato

  • 1/2 a cauliflower head

  • 1 teaspoon of cumin

  • 1 teaspoon of turmeric

  • Rocket + spinach

  • Pumpkin seeds to sprinkle on top

  • Salt, pepper & olive oil

For the feta dressing:
100g feta
2 tbsp natural yogurt
1 tsp of honey
Olive oil, lemon juice, salt & pepper to taste

Instructions

1. Preheat the oven to 200°C & line a large roasting tray.
2. Slice the onion thinly. Then in a bowl combine the onion and the juice of one lime. Leave this aside to pickle while preparing everything else.
3. Cut the cauliflower into even-sized florets. Chop the sweet potato into cubes. In a large bowl mix the cauliflower and sweet potato with the a teaspoon of cumin, a teaspoon of coriander and some olive oil. Season with salt and pepper.
4. Spread the veg out across a large roasting tray along with two chicken breasts seasoned with salt, pepper & olive oil. Roast for about 25 minutes.
5. Slice up a red pepper, season like the chicken and throw it in on the roasting tray when there is 15/20 mins left on the timer.
6. Make the feta sauce by adding all of the ingredients to a bowl to taste & mixing well.
7. Plate the dish by adding the rocket + spinach to a bowl, followed by the roasted veggies. Add the chicken, pickled onions, some chopped cherry tomatoes, then the feta sauce. Sprinkle with the pumpkin seeds & enjoy!
