Salmon Tray Bake

Ingredients

  • Salmon darns

  • Rooster potatoes sliced into wedges

  • Asparagus spears

  • Mayo sauce: Mayo, olive oil, lemon juice, salt+pepper (to taste)

  • Butter sauce: 2 tbsp butter, pepper, 2 garlic cloves & a handful of parsley

Instructions

  1. Preheat your oven to 190C fan.

  2. Coat the wedges in oil, salt & pepper. Bake for about 20 mins.

  3. Push them to one side of the baking tray & then add on the salmon & asparagus. Coat them in the butter sauce & add lemon slices to the salmon.

  4. Bake for 10-12 mins.

  5. Serve with the mayo sauce & enjoy!
