Salmon Tray Bake
Ingredients
Salmon darns
Rooster potatoes sliced into wedges
Asparagus spears
Mayo sauce: Mayo, olive oil, lemon juice, salt+pepper (to taste)
Butter sauce: 2 tbsp butter, pepper, 2 garlic cloves & a handful of parsley
Instructions
Preheat your oven to 190C fan.
Coat the wedges in oil, salt & pepper. Bake for about 20 mins.
Push them to one side of the baking tray & then add on the salmon & asparagus. Coat them in the butter sauce & add lemon slices to the salmon.
Bake for 10-12 mins.
Serve with the mayo sauce & enjoy!
