Chicken Laksa Style Dinner

Ingredients

(Serves 2 with leftovers depending on appetites!)

  • 3 chicken breasts

  • 250g of rice noodles

  • 2 tsp of red thai curry paste (half a jar if you’re using the Thai Gold brand, this is my fave!)

  • 1 thumb of minced ginger

  • 3 cloves of crushed garlic

  • 1 tin of coconut milk

  • 1/2 a chicken stock cube

  • Large handful / half a pack of chopped green beans

  • 1 tsp of brown sugar

  • 1 tbsp of fish sauce

  • Juice of half a lime

  • Coriander, lime juice & spring onion to garnish

Instructions

1. Add oil to your pan & then add in the chopped chicken breasts. Brown the meat slightly, then add in the curry paste.

2. Coat the meat & fry off for a minute or two before adding the ginger & garlic.

3. Fry for another 2 minutes before adding the coconut milk.

4. Then take half a stock cube, add it to the empty tin and then fill with hot water (careful when handling!)

5. Mix & then add the stock into the pot.

6. Bring to a simmer & then add in the green beans (or whatever veg you like!)

7. Pop the lid on, and simmer for about 10 - 15 minutes on a low heat.

8. Meanwhile, cook the rice noodles per pack instructions.

9. Add the brown sugar, fish sauce & lime juice to the pot. Allow to simmer for another two minutes and then add in the almost cooked rice noodles when they have about another minute left to cook.

10. Check the flavour of the dish & add more lime juice, fish sauce or sugar depending on your preference.

11. Serve in a bowl & top with spring onion, coriander and more lime juice.
