Parmesan Roasted Potatoes

Ingredients

  • 1kg of Rooster potatoes, sliced lengthways

    Sauce:

  • 60g of butter

  • 30-40ml olive oil

  • 2 gloves of garlic

  • Small handful of parsley

  • 1/2 tsp of chilli flakes

  • 1 tsp of oregano

  • Salt & pepper

  • 2 tbsp of parmesan

  • Grated parmesan for dipping

Instructions

  1. Slice your potatoes lengthways in half

  2. Melt the butter, then add in the rest of the sauce ingredients

  3. Pour the butter sauce over the potatoes, make sure they are evenly coated & then dip the potatoes individually into the extra parmesan

  4. Brush the top of the potatoes with any excess sauce

  5. Roast at 200C for 30-40 mins with the flat parmesan side facing down

  6. Enjoy!
