Smoked Salmon Pasta

Ingredients

  • Cherry tomatoes

  • Minced garlic

  • About a dessert spoon of mascarpone, or crème fraiche if you prefer

  • Smoked salmon

  • Handful of fresh parsley

  • Salt & pepper to taste

  • Wholemeal fusilli

Instructions

  1. Fry the tomatoes & garlic in olive oil until completely softened.

  2. Add in the chilli flakes & mix through.

  3. Add in the mascarpone and stir until combined. Then add in some pasta water to loosen the mixture.

  4. Add in the smoked salmon and leave on the heat until cooked through, about 3-4 minutes.

  5. Sprinkle over the fresh parsley and season well.

  6. Enjoy!
